Spain’s cabrales blue cheese set a new world record when a 2.2kg wheel sold at auction for €30,000, making it officially the most expensive cheese ever sold. The wheel took the top prize at the Principality of Asturias’ annual cabrales competition, and the high bid surpassed the previous record. Reporters say the buyer was the same restaurant owner who paid the earlier record price in 2019.

Two new studies presented at the European Society of Cardiology’s annual meeting found links between consuming ultra-processed foods and higher risks of heart disease, including heart attacks and strokes. Ultra-processed foods are widely available consumer items such as fizzy drinks, many breakfast cereals, packaged snacks and ready-made meals. One analysis reported that a 10 percent increase in daily ultra-processed food intake was associated with about a 6 percent rise in risk of cardiovascular disease.

A new international nature fund set up under the Global Environment Facility aims to help developing countries meet the biodiversity targets agreed at the COP15 summit in Montreal. The fund’s creation was one of the most-contentious issues at those talks, prompting walkouts and repeated negotiations between wealthy and poorer nations. So far, only Canada and the United Kingdom have pledged money, leaving roughly $40 million still needed to capitalise the fund ahead of COP16 next year.

Researchers led by Itzhak Khait at Tel Aviv University have found that some plants produce audible, high-frequency sounds when they are stressed or damaged. The team tested tomato and tobacco plants and recorded ultrasonic clicks that arise during drought stress or after cutting. Sensitive microphones and acoustic analysis allowed detection of these sounds from as far as five meters, suggesting plants may broadcast information about their physical condition.
